A native plant of the Andes Mountains, yacon grows in the special climate of the high-altitude valleys. It has thick and extensive roots that store all kinds of minerals, vitamins, and a rare type of sugar called FOS (fructooligosaccharide). FOS is composed mainly of a fructose that cannot be absorbed by our digestive systems because we do not have the enzymes to metabolize it; therefore, it passes through the digestive tract undigested and thus provides very few calories.
